- for stuffing-
- 2 medium potatoes boiled
- 1 green chili, finely chopped
- 1/4 cup chopped coriander leaves
- 1/2 tsp Red chili powder
- 1/2 tsp coriander/cumin powder
- 1/2 tbsp amchur powder/ dry mango powder
- Pinch garam masala
- to taste Salt
- For coating-
- 1 cup besan
- Pinch baking soda
- 1/4 tbsp red chilli powder
- to taste Salt
- 1/2 cup water or as needed
- for green chutney--
- 1 cup Coriander leaves
- Few Mint leaves
- 2-3 garlic cloves
- 1 tsp ginger
- 2 small green chillies
- to taste Salt
Instructions to make to make Bread pakora
- Peel boiled potatoes.
- Mash/grate them and add Green chilli, red chilli powder, coriander leaves, cumin powder, dry mango powder, garam masala and salt. Mix well and stuffing is ready.
- For outer coating- take 1 cup besan, add pinch of baking soda, red chilli powder, and salt.
- Add water as needed, mix well to make a not too thick and no too thin batter.
- For making chutney- add coriander leaves, garlic and ginger, mint leaves, green chillies, and salt in a grinder. Make a thick paste.
- For making pakoda- take one bread slice, apply green chutney on it. Take another slice, spread the stuffing mixture evenly over it. Don't over stuff.
- Place the bread which has chutney on top of the other slice and gently press it. Cut it diagonally or from the middle.
- Heat oil in a kadai over medium flame. Drop a small amount of batter in the oil, if it comes on the surface without changing color, it means it's perfectly hot.
- Dip each pieces in the batter and coat evenly. Then slide in the medium hot oil.
- Deep fry until it turns golden brown on all sides. Drain it on an absorbent towel. Serve hot!
